Mahavir Jain 67498c769f change(esp_tee): use json_parser in the attestation test, json_generator 2.0.0 ...

Parse the attestation token with json_parser instead of cJSON. The
header, eat and public_key objects are hashed verbatim from the token
text, which is exactly what the TEE hashed before signing. The TEE
subproject moves to json_generator 2.0.0, which escapes strings as RFC
8259 requires.
